A Sushi Oke is a large, round, flat bottomed wooden mixing tub. Traditionally used when making sushi rice, the sushi oke allows the mixture of rice vinegar, sugar, and salt to be fluffed and mixed around as it cools down.
For sushi oke, it is important to use a non-metallic container because this prevents any interaction between the rice vinegar, which will be added to season the rice, and any metallic material. The hinoki wood for this sushi wooden bowl also serves to absorb excess moisture from the cooked rice while the large mixing surface allows the hot rice to cool rapidly.
To use the sushi oke, simply transfer the cooked rice into the sushi wooden bowl and toss gently with rice vinegar, sugar, and salt. Fan the rice as your mixing then once finished, cover the entire sushi wooden bowl with a cloth and allow to cool. Hand wash recommended. Made in Japan.
